Just like mechanically separated meat, frozen low-fat skins are produced using special machinery. Refrigerated chicken (breast) skins are minced with a special production process and then frozen in polyblocks. The end result is a chicken (breast) skin with a fine structure and a fat content of ±10%. To compare: unprocessed chicken (breast) skins generally have a fat content of ±45% (see also the diagram below for a comparison between low-fat and unprocessed skins).
Low-fat skins are generally processed in combination with one of our other products, e.g. frozen mechanically separated chicken meat (also known as chicken MDM) or 3 millimeter baadermeat.
Low-fat skins are considered a semi-finished product intended for further processing. Low-fat skins are often used in combination with other ingredients, partly due to the fact that low-fat chicken (breast) skins contain a relatively high amount of collagen. The product is used for the production of various meat products, e.g. burgers and sausages.
